Lol...that was by no means a knock on Seattle or it's pizza...just hard for a Jersey guy who's had NYC pizza to understand...

Maybe I'm overdue for a trip to Seattle...

As an original Illinois native, I just can't wrap my head around getting all that excited about any pizza, having had Chicago-style pizza many a time.

Is all Chicago style pizza the deep dish variety? I can't get behind that kind of "pizza" for a number of reasons.

Bah, Chicago style.... might as well have lasagna. If you haven't had NYC style I can understand not understanding the fascination; it's thin, it's on the go, it's crisp flavor and no fooling around. That said I prefer Buffalo style, slightly thicker crust with more sauce and cheese, and slightly burnt on the bottom and top. It can go very wrong though in the form of a soggy pizza. Bocce's pizza is where it's at.

Best NYC style pizza I've ever had was in Amsterdam of all places. 2006. The owner was from NYC and was out on the street working the crowd to get people in to try the pizza.

Well, I have no problem doing so. Giordano's is the best thing I think I've ever eaten.

The best Pizza really is in Brooklyn. Nothing like it. But I always keep a Giordano's in the freezer.

Any chance of you uploading a recent picture of your current pedalboard Spencer?

My pedalboard is all ripped up at the moment but I'll post a picture when I get a chance to put it back together.

For real. Di Fara and Lucali are still my all-time faves, but Delancey here in Seattle can easily be mentioned in the same breath as all the legendary Brooklyn spots.

I'm back in Seattle but I'm moving (both my shop and my home) next week, so the rusty boxes will have to wait until June.

On another note, I saw Tim Lefebvre using my octaver prototype at the 55 Bar the other night and he absolutely slayed.

Welcome back Spencer! We've missed you. I'd be happy to help you move, but sadly I'm on a different coast. Good luck with all the moving though, sounds like the shop is getting an upgrade.
