Could I get some info on how to read the serial# of my Ernie Ball Music Man StingRay to know when it was made?

There's no way to "read it". Serial number itself gives you no information about DOB or anything, but you can search it on EBMM's database like cataract linked you. If you get no match there, your best bet is to contact EBMM directly.
You can also register at the Ernie Ball forum where there’s a sub-durum dedicated to participants submitting serials of their Music Man basses to have the age determined if it doesn’t show up on the list.

Take the bass apart and look at the neck heel and body neck pocket. The date is printed on both. That'll give you a good idea.
I put my 1987 StingRay's serial number on the forum mention by GerI O and within a few days they provided the build year, month, finish and features; everything they posted was spot-on. It was built in April 1987 and I bought it new in November '87.
