My personal favorites, picking one per album "grouping" in their chronology...
With Paul Di'Annio: Phantom of the Opera - So incredibly progressive and yet so fast and energetic...also love Phantom in general.
Bruce and Breakthrough: Hallowed Be Thy Name - Meaningful lyrics, great instrumental work, and amazing vocals.
Proggy Ventures: Caught Somewhere in Time - end of the solo and the overall futuristic feel is amazing.
Dark Age: Fear of the Dark - Classic lyrical themes, energetic rocker.
Blaze Era: Blood on the World's Hands - Great bass solo, good overall work.
Bruce's Return: The Wicker Man. Especially the US promo version; check it on YouTube.
Other favorites of mine include Aces High, the Trooper, Number of the Beast, Be Quick or Be Dead, Caught Somewhere in Time, and Brave New World.

Where Eagles Dare, Number of the Beast and Die With Your Boots On are my personal faves to play. Oh, and Hallowed Be Thy Name 
2 Minutes to Midnight, Aces High, Hallowed Be Thy Name, and Fear of the Dark. Actually, I think this version of Fear of The Dark is cool. Just get over the fact that the only instruments are voices and drums people.

Innocent Exile! I'm constantly playing that song whenever I pick up a bass. Doesn't help that I sometime use Steve Harris Rotosounds. They just beg for that riff!
We needed to pick one up for the cover band recently. I wanted "Run To The Hills," but the singer had less trouble with The Trooper. It goes over better than I thought it would!
Anything off Live After Death, Hallowed is a standout IMO...

I love old school Maiden and for that matter old school 'Arry. Not a massive fan of everythint post Seventh Son, but still a huge fan non-the-less.
