Just don't bake them too much. Nothing worse than overdone (cake-like) brownies.
At a quick glance, I'd swap out more of the flour for cocoa in that recipe.
In the OP rant, you failed to mention the most disgusting brownie variant: chocolate brownie with chocolate chips and chocolate frosting topped with chocolate shavings. Save yourself the trouble and take a big swig of this:

Yeah... The first time I ever tried "special" brownies my friend used twice the water and it ended up tasting like a fluffy Christmas tree with chocolate ornaments. Baking is a science people.
I only dig chocolate chips when they're white or dark chocolate, and even then it's nice to maybe toss in walnuts or something else. In my mind, they should either be normal brownies or you should go crazy and throw everything in them you can.

A brownie should be gooey chocolate blend between cake and a tart.

While I guess it's in the same family, this is my favorite take on the traditional brownie. The batter is more brown sugar than chocolate and done right it's soft, almost gooey in the middle, and the flavor of the bar is complimented by a few chocolate chips and nuts. My mom always used chopped roasted pecans

As a unrepentant chocolate freak, I kneel before the Dark Master. With nuts, without nuts, cakey, thick and chewy, frosted or not. Dusted with confectionary sugar. Top them with sugar and hit with a propane torch for a crusty top, whatever. To me, brownies are like basses. There is a right kind for every different gig. What’s the best brownie for metal? Who cares, just bring some and rock those ‘effers!!!

I love the smoothness of a good, simple, just-a-brownie kinda brownie. If I put anything else in the mix, it ain’t gonna be for texture.

Brownies, like other foods, continue to cook when removed from the heat source.
To make matters worse, if you start to smell chocolate while they are still in the oven, it's already too late.
