Can you ever hear yourself how the audience does?

No.

My goal is to make sure my band and I can hear clear definition in all notes and punch while on stage. FOH is FOH.

My current rig slices like a knife on stage - Dingwall SuperJ5 - Genz Benz Shuttle 6.0 - pair of GK NEO 112's.

Yep. I don't worry about what the audience hears, unless the PA only has, say, only kick, vocals, and an acoustic guitar going through it, which wasn't common.

I'm not performing at all at this point, but when I was I didn't even worry about what my bandmates heard onstage since we always had monitors. My amp was used for my own near-field monitoring and nothing else, so it only mattered if it sounded good to me.
