Can't decide......................

Either choice would probably work. Two 1-12 cabinets would give you a little more flexibility, as you could get by with one in some playing situations, meaning less to tote around. Any chance of trying them out in a live setting with your band?

Years ago, when a GK1001RB was my main amp. I preferred EV loaded cabinets (mine were Mesa Boogie's). I ran two 1-15 cabinets, or a 115/210 setup, no biamping. Great amp, heavy and loud with plenty of good tone.

I played almost exactly your rig (1995 Sterling with Nordstrand, 700RBii) and style for a long time with an older Aguilar 212. It ruled. Sold the 212 when i moved, and now use a 1x15 Eden that is meh at best, but does the job.

Love EV's as well, no live setting in the near future for me right now.

GK Neo 410.

I like my 2x12, but the Neo was great, too.

FWIW, I did notice a lot more volume going from an 8 Ohm to a 4 Ohm. For me, anyway, it was all the difference in keeping up with a much louder band. Downside is that no, you can't expand... But after going to my 700w Schroeder 1212L, I don't need to.

Me too, as i've been going back and forth between the 410 neo 4ohm and 8 ohm, i notice it too.
