McCartney did die, and the man we know now is an imposter / double.
I saw an interview in the 70's where the first question to Paul and Linda was "Those rumours about your death...were they true?" Broke them both up, and was the start of a great interview.
To believe that he died, you'd have to believe that they could really install an imposter for the most successful musician on the planet, who would look and sound enough like Paul to pass for him and had the talent to write equally successful material in a similar vein for Wings and solo stuff (longer than he was in the Beatles in fact) as well as playing all the same instruments. You'd have to believe that after during the acrimonious breakup of the Beatles no-one would give the secret away, and likewise that friends and family would play along. You'd have to reconcile the contradictory details in the rumours...for example was the replacement Billy Shears or Willie Campbell? Given that the first "clues" appeared on Pepper if I recall correctly, you'd have to conclude that Paul's best work was done by the imposter.

In a related note, I do think we landed on the moon. However, that video footage is Hollywood. Why? They didn't have the proper technology to send an audio AND video feed 238,857 miles (distance to the moon) at that time. They couldn't even shoot a broadcast from the the East to West coast without repeaters and that is only about 2-3% of that distance. We needed "proof" to show the American people and the world and it came from a Hollywood studio.
