As a lighting guy, white instruments can become any color depending on the lights, whereas other finishes may react strangely and not have any visual appeal for large parts of the show.
As a band photographer, they can be a problem because they're so bright. A player with dark clothes and/or skin can be badly underexposed as the camera's meter deals with the instrument, or the bass gets blown out when you expose for the player.
As a driver in Texas I've leaned towards white cars/trucks because they don't quite get volcano-hot in the summer sun.
