Most of that's not desert, it's Great Plains grassland.Haven't driven the routes myself, but unless satellite imagery is deceiving me, the desert kicks in only around Abilene. And by a thumbnail estimate, I'd say the green part of the state is around 60% of the land area. According to some website checking, only 12% of the state is desert proper, though I'm sure the arid plains and brushland are more extensive than that.
I lived in Texas for a few years and never figured out what "Don't mess with Texas" was supposed to impress on me.

As for the grave marker in the original post, my hometown has a historical marker describing the ambush of some outlaws by local town folks:

Texas is, as others have described, very diverse. We have one of the longest coastlines, pine tree forests, grassy plains, mountainous terrain, and deserts.
Stereotypes? Yeah we are an independent lot. We wear hats and boots, listen to country music, say “ma’am and sir” and are loyal to the Lone Star flag. We also listen to the blues, and rock music. We count among our musical natives, Buddy Holly, ZZ Top, Pantera, Stevie Ray Vaughan, Willie Nelson, Waylon Jennings George Jones, Kenny Rogers, Janis Joplin. just to name a few. We are very welcoming, and friendly. But if want to come here and tell us how we need to do things like where you came from. You will be quickly directed to the nearest bus station/airport, and invited to return from whence you came.
If someone in Texas says “Bless your heart” don’t automatically assume they truly feel affectionately towards you.
A road trip in Texas is not like most places. You have to plan on hours behind the wheel.
Texas has some of the most highly respected Universities in the country. Some of the most advanced technology companies, the NASA Johnson space center, top rated zoos, museums, and tourist attractions. Are we “different”? Where else is one of most venerated battle sites, the scene of a crushing defeat? Besides the Alamo?
We have had our share of shady politicians, crooked businessmen, tragedies,etc.
We have heat, cold, drought, floods, hurricanes, tornadoes, rattlesnakes, water moccasins, copperheads, coral snakes, scorpions, black widow, and brown recluse spiders, tarantulas and fire ants. But when all is said and done, there is no place else I would rather live
