Favorite Hot Sauce.... GO!

If you like Tabasco you should definitely try Crystal. Still made in Louisiana but far better IMHO, YMMV and all that jazz.

I’ve had Crystal before. It’s not that I don’t like it, its just not hot enough for me. I think Tabasco has a really sweet flavor to it at first blush that keeps me coming back
 
It’s not that hot. It’s more the flavor I like. I think of it as being a little less vinegar tasting and little more tamatoey and sweet tasting.

For more heat I add this:

My wife has friends from Trinidad, they make their own hot sauce from ghost peppers. They gave me a jar of this home made stuff. I didn't know how hot it was so, I lathered a pound of chicken wings with the stuff and BBQ'd them up.
I now refer to that concoction as A$$ Bleach! Just stupid hot!

I honestly have no idea how it's made, but the chilis are ground up much finer than sambal.
We're accustomed to spicy stuff, but this stuff blows all our other chili sauces away.

The label isn't what's in the jar, BTW. It's something the local restaurant manager makes.
Put a tablespoon in some buffalo wing sauce the other day & that made them spicier than the ghost pepper chili wings at the local sports bar.

I was at the local Asian food importer today. I wanted hot sauce. It's always rooster sauce or garlic chili paste. they have a wide selection though.

What I really wish I could find is Rooster sauce (Huy Fong) in a low salt version. It always nearly always ends up just a little too salty for my taste.

How I use it:
I usually mix it with pineapple juice and balsamic vinegar for a marinade. The balsamic really brings out the pepper's flavor and puts it in the sinuses and the pineapple juice caramelizes really well and gives character to the sugar in the sauce.
