I honestly have no idea how it's made, but the chilis are ground up much finer than sambal.
We're accustomed to spicy stuff, but this stuff blows all our other chili sauces away.
The label isn't what's in the jar, BTW. It's something the local restaurant manager makes.
Put a tablespoon in some buffalo wing sauce the other day & that made them spicier than the ghost pepper chili wings at the local sports bar.

I picked up 'The Hot Ones Trio - Original' the other day from my favorite hot sauce shop, Heatonist in Brooklyn.
My favorite sauce so far from the trio is Los Calientes. It's hot enough that you know it's there and packed with flavor. It's legit layers of flavor, not just a bunch of vinegar and peppers. From now on, I plan to keep a bottle of this in hand at all times.

@MJ5150 can you get Blue Bus Fermented products ? They are a product made in our neighborhood, about 3 blocks from @Passinwind they do a cultured Chili Paste that is great.I am addicted to their Kraut-Chi. Gourmet dog, toasted bun, kraut-Chi. done...
I forgot you were in Olympia. We were up there a couple of times last fall for dog scent work exercises. Our 6 year old golden is a good scent hound. We're working on level 3... last time up we found a really good vegetarian oriented hole in the wall restaurant downtown. and the name is catchy ... I forgot ! really a great breakfast. Hope they are there when we get back.I had a shopping cart filled up, then when I went to check out, my only option was to pick it up in Bingen. I wanted to try the chili paste, but we won't be making that drive anytime soon.
We have a joint here in town like Blue Bus. It's called OlyKraut.
We love it. I'm especially fond of the cumin jalapeno kraut and smoke and kale kraut.
They also sell sipping brine. I was a bit skeptical at first, but wow it's good.
