That's what it is Sambel Oelek. Some places just make their own. With my wife being Vietnamese we blow through this stuff at the house.I think I've tried that. It wasn't the same. I'll ask at the pho place. I think they might make it there.

That's terrific! Thanks!None at all. Skip right past hot peppers (any peppers, other than peppercorns, actually) in recipes. I do not remotely see the appeal. Ginger, I can go for.
I'm not big on real HOT, hot sauce. My favorite is this one. Tasty with a zing, but not overpowering:

I don't know what it's called, but it's a hot sauce/chili paste that's always on the table at Pho restaurants along with sriracha and hoisin. It's amazing.

Their hatch chili sauce is pure deliciousness. I don't go for extreme heat, but rather flavor with some heat.

I love crystals infact I can drink it but it's just not strong enough. Is there anything like it but hotter?I like sriracha, but I don't think it's as versatile as Crystal Hot Sauce (or Texas Pete) In the South, those two are a food group unto themselves. They go with everything.
