If you want to deep dive, you can use the stem splitter in Logic Pro

Stem Splitter in Logic is great, and I've used it many times to remix stereo recordings of my recent live gigs.
But it's a destructive process which creates individual PCM files in your project folder/bundle. Sometimes that's just too much hassle if you just want to play along a random MP3 track on your hard drive.
But if Logic is what you already have and you don't want to buy anything else, then just use it.

Waltz for Debbie with Bill Evans and Cannonball Adderly. I love the bounce feel of this tune and that horn solo is one of my favorite understated solos out there, IMHO.
