I like all vegetables, but have favorites periodically. This fall it's been beetroots. Boiled until tender, then skinned and tossed with butter and chopped parsley. Or just sliced, topped with chévre and baked in the oven.
 
Me and one of my sisters used to fight over the last of the broccoli at dinner, and I can still say steamed broccoli with mayonnaise beats out fries and ketchup for me anyday.

Spinach is pretty bomb too, not only for being the main ingredient of my beloved spinach dip, but also from a salad my mom used to make with fresh raw spinach, fresh sliced strawberries, and a sweet poppyseed dressing. F-in bombsauce right there.

And lastly artichokes are great, another one that goes great with mayo, but I haven't eaten one in years since my last consecutive 6 artichokes had worms in them. I still love them, but as soon as I see that prickly SOB sitting on the plate in front of me, all I think is worms, and immediately lose my appetite, and I've tried many times.

Oh yeah, and brussels sprouts are disgusting, and along with lima beans, are one of the very few things I will straight up REFUSE to eat.
 
Um, carrots actually, for real. Steamed, roasted, stir fried and raw. Or baked with brown sugar and butter. Yum.

Asparagus, spinach, artichokes and most tomatoes all tie for second.

Brussel sprouts and stewed tomatoes tie for dead last. Yuck.
