We use a Fostex (i think) 16 ch digital hard disk recorder. Mic everthing straight to unit. Everything unity gain so what we hear in stage monitors is exactly what is going to disk. Go home, dump it to an mp3 file and there you have it. Nothing complicated. Just decent mics, correct gain structure, good stage volumes so we can hear what we are doing, and good recording unit. When we suck, we suck. When its good, its good.

I've never had the pleasure of playing through an old Sunn or the Fender, sounds great, though. I love big tube amps, they make me happy.
