How would you approach, with pizz?

Well, it's kind of silly. Obviously, you can't crescendo a plucked note. I would just interpret that as playing the second and third notes a little louder than the first and last.
Sometimes music notation software - if the arranger is not paying perfect attention - can result in silly things. Perhaps the arranger had the passage originally as arco, then decided to make it pizz but neglected to change the dynamic markings.

You know how silence can be deafening? Well, that eigth rest needs to be a little louder.

Not to state the obvious, but obviously the attack on the 3rd measure E will be louder than the attack on the 2nd measure E.

How about this:

1st E - piano
2nd E - mezzo piano
3rd E - mezzo forte
followed by a B played piano

I don’t think the composer (whoever it was) was foolish enough to expect the same pizz to get louder after the initial attack.

I would listen to what is going around me and also observe what the conductor is signaling. Then I would respond accordingly.
