How best to practice with noob wife?

You've obviously sought out a teacher for her rather than teach her yourself. This is good. Assuming you both have some faith in the teacher, give the teacher the benefit of the doubt. Don't give her too much at first.

I have taught private music lessons for years, and I've more than once met well-meaning parents who wanted to redirect my teaching methods. If you have faith in the teacher then give the teacher a chance to do what they do.

Above all... keep it fun.

+1 If she is getting bored because she wants to go at this more quickly then that is something for her to take up with her instructor. Let her own it. Keep jamming with her though... makes it fun and applicable for the both of you.

Be careful though. She may outpace you. When my boys (twins) were 12, they would come to me,hand me a guitar, and ask, "Dad, can you show me how to do...." Now, 3 years later, they come to me, hand me a bass (because the basschick goddess they play with is absent), and say, "Okay, just do this..." as in Let's keep it simple for the old guy.

One of the first things I did when learning bass with an instructor was playing root-fifth with a metronome and the instructor playing a song on guitar. He only used two chords so it wasn't overwhelming. Perhaps playing a song might keep it interesting.
