hey i was wondering what differnce ohms make and is it better to haver more or less in an amp because my head does 300 watts at 4 ohms and all the cabinets i have looked at work at 8ohms, what does this mean will they still work witgh my head, and is 8ohms or 2ohms better???????????

Ohms are just units of resistence. The higher the ohms, the less power you'll get out of the head. The less ohms, the more power you'll get. You'll get the full power out of your head (300w) if you're running 2 8 ohm cabs (which together make 4 ohms) or a single 4 ohm cab. If you run a single 8 ohm cab, you'll get less wattage out of the head.
Chances are with a lower wattage head like 300w, it won't be able to handle 2 ohms so you likely won't have to worry about that

Yes. Or one 8 ohm cab. The only thing you can't do is run your amp through less resistance than it's rated for.
