What exactly is going on that makes them isolated? I know my way around electronics a bit, so techie is OK.

The output voltage is isolated from the input voltage in the sense that
there is no common ground. This assures that it cannot be the source
of a ground loop (hum).
Isolation is generally achieved by using a transformer. The output
(secondary windings) of the transformer are not grounded in any way.

I actually just saw a schematic for this yesterday that answered it. Each output has its own transformer basically as you said.
