It's Chili Season!

October 21 marks our first pot of the season. We experimented with a chicken and white bean recipe then threw a little cilantro on top. It came out good, but chicken isn't my first choice in chili. Then again, sometimes you have to use what's in the fridge.

It is getting top be that time of the year again so am looking for a sale on beef chuck roast to cut and grind some chili meat for the coming months to freeze and brushing off the dusty old recipes.

Tasty. Chili is just as much about spice and attitude as the meat, in the olden days folks would use any meat available. I grew up on chili made with squirrel, rabbit, piggie and poultry just as often as the classic beef. I have a friend who makes an excellent chili with Chicken thighs and dark chocolate. When I had a vegan girlfriend tofu and mushrooms were my go to for protein and texture, I still occasionally add mushrooms to stretch when meat is in short supply.

Great call on the mushrooms. They certainly do answer the call for meaty texture. We'll give that a try next time. Thank you for mentioning that.

Yep, huge fan of adding ‘shrooms to any of my chili recipes.

Also, now that I’m in Arizona full-time it should be easier to find prickly pear cactus pads — aka, nopalitos — in the grocery store. Or, heck, in my back yard! Those are excellent in chili!
