The speakers are two 250 w, 8 ohm Sidewinders in parallel for a total of 500 watts and 4 ohms. Serious booty!
But I actually have to slightly boost the bass knob to get the same amount of low end as the Scout has...

+1 the 4 ohm standard Scout cab makes little to no sense, especially the 12" model. The 8 ohm version gets just as loud, while the 4 ohm can choke on all the power. The 15 is another story, but so few of them compared to the 12.

I would go with the 4ohm 12" at 300 watts. if I need more I would use my 2x10 cab and amp.

I am going to weigh in on this too.
After years (5 or so) of using a 4ohm WA 12, and then adding either a 4ohm Scout 1x15 (now sold), or a 4ohm Scout 1x12 (current rig), and running the WA at 2ohms, I am starting to come to the position that I wished that I had an 8ohm WA combo, and an 8 ohm extension (either the 12 or the 15).
I have said repeatedly that running the WA at 2 ohms is not an issue, and my amp has never failed me under many challenging situations (i.e. "loud-ish" 4 hr outdoor gig in 106 degree temps). I am not taking any of that back per se, but I am starting to feel as if I am pushing the WA too hard at 2ohms and the sound I am getting out of the 2 1x12 cabs is more mushy than I really want, even though I never push the WA gain over 11 o'clock.
When I use the WA 12 by itself, its pure tonal bliss, and I am reminded over and over again how much I love that clean and warm WA tone, but sometimes it's simply not enough (bigger venue and no FOH), and when I add that ext Scout 1x12 I get ... well a bit of mush and sag, and I just don't want that at all.
So I am starting to think that an 8ohm WA and 8ohm ext would be a better rig option.
bit of a crossroads for me actually, as I am trying out an Ampeg PF500/115HE rig at the moment and it is simply delivering a bigger clearer tone than the WA 12 solo,and giving me a one cab solution that seems to compete with the WA with 2 1x12's. Of course I am having to deal with the baked in Ampeg tone too, but I think I can deal with that.

Different strokes....or ears. I've owned 4 and 8 Ohm 12" combos at the same time and the only difference I could hear was that the 4 Ohm would compress well before full power. The impedance does not affect power handling, and both 4 and 8 Ohm 12' drivers cannot transduce much more than about 130 watts. It was a waste. IMHO the best option is an 8 Ohm 12" combo with a 212, 4 Ohm ext cab. That gives 3 options to cover most anything. YMMV.
That's what I do. I've 2 AE112's & can run the combo with both, one or by itself. Or with my NV412
