There are a number of ways to shape sound. First and foremost, it happens with your fingers and your technique. But it also is shaped by the "electronics" on your instrument, the "electronics" in your amp, your speaker cabinet, the room you're playing, and the musicians/instrumentation you're playing with. Some of those things you have control over during a gig, others you don't. So flexibility can be key. In addition, eq can be used more as an effect as opposed to trying to dial in "neutral" (whatever that means).
