Neck Radius vs Pickup...

Certain basses have much rounder necks (radius) than others.

I have one bass that is noticeably rounder than my others.

A lot of pickups are flat across the surface. Yes, you get a bit of adjustment on height on some pickups (split style) but there are soapbars and humbuckers that are dead flat across with no individual polepiece height fix.

On a neck with a pronounced radius you will have different string height across some of these pickups.

The string height is adjusted for playability on the neck so you can't mess with it for the flat pickup.

Just something you have to live with?

look for radiused pickups.
I prefer flat ish necks.
are you encountering uneven output across the strings of a particular bass or is this a search for information?

Dimarzio, and others have adjustable pole pieces, and others have radiused pole pieces (SD music man pups, and MM pups)

I've often wondered if dropping a couple of small steel discs or washers on the top of the pole pieces could be used to adjust individual string sensitivity - effectively bringing the mag field closer to the string.
