Nordy Big Singles or Fat Stacks?

Good choice! No matter which Nordstrands you go with, I think that you will be happy. I have a big single in one of my basses and I have played a Nordy with the fat stacks. I noticed that the big singles are mean with a slight bump in the mids. They really cut through in a rock setting and are extremely sensitive to your dynamics.
Fat stacks are a bit more refined and I think more even across the frequency spectrum. Slightly less output but dead silent since there are two coils. I'm sure that you will like either one better than those silly Barts.

The Fat Stacks and OBP-3 pre in my Fretless Valenti are very flexible. Full, meaty, clean, growly when I want it, clear mids & bottom, refined top...stop me....I can't imagine pickups I would like better in this instrument--it has an ebony fingerboard, and TI flats tuned EADGC.

However, I have zero experience with any other Nordstrands except for reviews I have read, so YMMV.

IMHO, based on my instrument, Fat Stacks are terrific. You might ask Nino Valenti about which Nordy's he likes for what kind of applications. He seems pretty knowledgeable about their pickups, to say the least!! :p
