Piezo

Fishman do piezo of various different types. I have Fishman saddles in my Spectorcore and it produces a lovely sound. LR Baggs also have a very good rep for acoustic instruments. I'm sure others will come up with different makes too.
My Conklin has RMC piezo pickups and preamp, and they sound very good - have a listen:

My Surine has what I think are ABM piezo pickups with a Bartolini pre-amp, this also sounds great but different:
