You must be using distilled water, because tap water won't do that.
What happens is it freezes so perfectly on top that it leaves a tiny hole in the center, just big enough for the water inside to freeze up and out as it expands.

I have been making ice for decades, but I have never seen this.

I don't even know what is happening. Maybe it was the moon, or some kind of seismic event.

Nevertheless, I did manage to use it in a spiced apple and rum cocktail.
