I looked back at my notes and it looks like Gb not G#

I think we confused you.
Cm7b5 is C Eb Gb Bb
Cmaj7+5 is C E G# B

I'm sure someone is going to say that Gb-7b5 is Gb Bbb Dbb Fb, but Gb A C E is lots easier to read.

F#-A-C-E is even easier to read. F#min7b5 is the vii chord of G Major.

Gbmin7b5 does theoretically exist, but only in the never-used theoretical key of Abb (A double-flat) major.

for spelling chords I find it useful to consider the circle of thirds:

A C E G B D F(... A C E G B D F...)

this is always the order in which chord intervals can be correctly spelled out
(but not necessarily the order in which they are played/voiced!)
notice it's the same sequence as the lines/ spaces on any staff
- "Every Good Boy Does Fine", "Good Boys Do Fine Always"...

A C E G B D F(... A C E G B D F...)

any sequence of 3 or 4 of these, modified by the key signature, gives you the natural chords of that key.
