Quilted?

Manufacturers will veneer a thin section of wood over the body of wood that a bass is originally made from. One of the popular types of veneers that can be used is quilt top, which to many looks wavy, rippled, or like ribbon candy.

Also, what's the terminology used to describe a glossy finish on the neck as opposed to the smoother, non-glossy finish?

Gloss vs. satin finish. You can also have an oiled bare neck.

Which one of these finishes is the typical finish of standard USA Fender jazz bass? I call it the glossy type but perhaps it is an "oiled bare neck".

I dislike the really smooth neck finish that you would find on some basses. I can't get a grip on those necks.
 
Depends on the year and the model. My MIA Jazz is a glossy body, but satin finished neck. I don't believe that Fender has knowingly let an unfinished or oil/wax finish neck leave their factory. There are associated issues with an infinished neck, which is why places like Warmoth won't warrant them.

I've never heard of a factory bare wood finish from Fender either. Traditionally they were glossy but now it depends.
