I had it on line - though the gain knob was at almost zero and almost peaking, so I set the Sansamp from line to instrument as a pad. Then dialed in the signal. For recording, I am guessing I should set it to line and make sure my interface is also set to line, correct? Or do I use instrument and dial in gain appropriately?

Sansamp DI to interface for recording - line or instrument?

To use as a di, you should use the balanced xlr output go into the interface with the mic pre. If you use the 1/4" out, set your interface to instrument. If the signal is to hot, there should be a pad (usually 10-20db) either on the pedal or the interface. If not, I'd drop the gain at the interface, first, then try to figure things out from there.
I would suspect the through-output to be instrument level, the other 1/4 out to be line-level and the XLR out to be mic-level.
