This has been mentioned a few times - it's what we do.setlists, with extra songs on the backburner for just in case..
Set lists, usually months in advance, because my bands need to overrehearse everything to hell and back, and still f*ck it up on stage.
Do you gigging guys use a written out setlist, or do you do an actual show in which each set is preset to ebb and flow, etc., or do you just wing it?
