Setting up recording with Audacity

I expect it is really not set up for line-level (FX-loop) signals, which is probably why the guy developed issues...
Running it through the amp doesn't help you anyway, since there is no way to return the signal to the FX-Return.
Using the DI-out into the recording interface to obtain a balanced signal usually helps reduce hum, IME.

I have a preamp (B7K) with a 'parallel out' jack - something like that might allow you to drive both the amp and a recording interface simultaneously...

I didn't see any mention of input impedance for that device, which could affect the signal quality, especially the highs, especially if you have a passive bass. This is another reason why plugging into the computer sound card mic input is usually suboptimal - but it might be worth a try...

I'm at a loss to explain why your DI->XLR cable->interface method produced bad sound, although the Behringer's connector is labelled "mic preamp" so maybe it's not actually suitable for a DI-level signal, or again, the impedances are not well matched. In which case - I think I'd try plugging the instrument into either the 'mic Line In' or 'Line 2' jack.

"It's not supposed to be" this difficult - but I have no experience with your interface, so I really have no better suggestions than "try stuff" and read the manual...

Yep, what @ArtechnikA said. And what I said a while back - if you run from the DI out to a Line IN, you shouldn't be having any issues, unless your amp is set up badly, in which case you should hear these issues through your cab!

My amp sounds awesome in my not so humble opinion :)

So you are saying run from the XLR DI OUT on amp to the LINE IN on my mixer....which line in? I see a 1/4" under the MIC XLR... is that what you mean? The other line ins look like they require some sort of splitter since they have 2 1/4" jacks.
 
Cool. IMO that's the right thing - but since you do not like the results, we'll work on others.

First - please try both pre-EQ and Post-EQ settings on the head.
If that produces no difference (?) go to post-EQ and dial in enough EQ to make the recorded samples sound good, no matter what it sounds like through the amp.

Then, just as an experiment, use a standard instrument cable to connect to the 1/4" Line-In under the XLR, and then (separate test) either of the other channels' Mono inputs...
 
Be sure to read (pg. 5&6) the description of the mixer channel "gain" knob and "clip" light. starting with the gain knob fully counter-clockwise, adjust the gain level while watching the clip light as you play. It should only start to light up at the highest playing levels. If it's constantly lighting up you are going to have a distorted sound. Once the channel input gain is right use the "level" knob to adjust the channel sound in the output mix. Once this has been established adjust your recording levels in audacity.

This was it! Lowering gain to 0, boosting DI level on amp, and adjusting recording levels I get a non-distorted recording.

You might want to experiment with the D.I. output level and the mixer input gain level to find the optimal settings. I'd think that you would want a DI signal that doesn't overwhelm the mixer input and allows a broader input gain adjustment (more "twisty" available on the knob) rather than a very narrow range (only small amount of twisty before it blows everything to smithereens regarding clip). The spec sheet for the amp and the mixer may hold the answer.
