After scouring the net, I can't seem to find piano + bass duet sheet music (easy/medium pop/rock/jazz/etc).

Sheet music for piano + bass?

Since you are having problems finding sheet music......
If you have a 5 string - piano sheet music works out - bass clef and ledger notes lower than E are not a problem. With out the 5th string you have to move up an octave, which I have a problem doing.
Remember the piano guy is also playing bass clef. You two need to share the space. Looks like less is more works.

Otherwise I would look for Double Bass solo work with piano accompaniment.
