Six String Flat sets-Who?

Who manufactures 6 string flatwound sets? Help

Could this be a 5-string set with a single high C? Or, does it have to be all six strings in one factory set?

If you have to have a packaged set, your options are much more limited than buying a 5st set with a high C single. The latter has a lot more options for you, esp from a place like Fret Nation.

LaBella, EB Cobalt flats, I think TI does.
