Endless options! Depends on the tone on your head, and what works for you and your music. Many already love the stock pickup as it is.
I went for the newer Relentless P (gold cover) because mine is the black/gold Precision, and I did not plan to use it in any form of vintage style configuration. But it can do vintage-just that it can also go above and beyond that (or below, depending on musical taste.)

The originals were quite good-just wanted the extra-Dimarzio "sauce."
If I was to get your Dakota Red, I would likely install the Dimarzio 60s P, because it's more vintage style, and is radiused to the fingeerboard for smooth playing over the pickup-which isn't something everyone does or should do for their music (not a Dimarzio chill, but love the products.) It can be gotten with a gold cover, and looks-wise amazing-to my perhaps bad taste, that is.
For a more vintage aesthetic, you know the usual vintage pickup makers/models to try.
