This makes sense in general to me, but how do you know what triads to add? Is it formulaic in some way or is it more a matter of just knowing how to stack them to imply certain complex harmonies?

Analyze, analyze, analyze. Understand what notes make up a chord. Understand how they relate to the 'parent' key. Learn the sounds of the harmonies.
The other thing here is basing triads off other notes of the chord (in the G7 example, playing a B minor triad or a D minor triad) gets you out of the "root-itis" that so many of us bass players get.
Ain't no easy way, it's a lifelong path.....
