What are my options, as far as make and model go, for powering 2 500 watt cabinets in stereo? I'm interested in economy here
and I'll likely buy used.

Go Crest CA-9 if you don't mind the weight (I sure don't). You can get a good used one for 450 - 500.
Absolutely smokin and versatile. You'll need a good Pre though.
Eden 400 for the pre.

I'll assume they're 4 ohms and the cabinets are rated for 500 RMS.
If they were mine:
QSC2402 (700 RMS per side at 4 ohms = a bit of headroom)
and add a decent, budget compressor.
The 2402 is discontinued but mine continues to work nicely pushing one ACME B2 per side(350 RMS min) and you should be able to find a used one at a good price. Andy at ACME said be careful as "some folks can drive a Corvette just fine and some wrap it around a tree"....meaning play(drive) carefully.

For a two-channel amp you can't easily beat the QSC PLX and Carvin DCM series for solid power, light weight, and reasonable prices.
