Lonny... that's all good advice.
Frankly, my starting point is always whatever my amp was left at from the last gig. Each amp has a starting point that's going to be close to my sound. I don't bother to go back to flat each time, because I've found, over time, that for my sound, certain frequency cuts and boosts ARE 'flat' for me.
Then I use thoughts similar to what Lonny has posted above to tweak for the room.
