The problem I've seen with Pi or Arduino based projects is impedance matching and audio boards or shields in Arduino microcontroller speak are not as great for instruments. and in many cases hi-fi audio in general. I suggest getting something like a Hi-Z to line level or use a buffer like a Source Audio ZIO which has a line level out before going to these devices. I have the pi-stomp and the buffer certainly has made things better for me

My uber simple ~$10-20 open source DIY buffer/gain stage from my interminable DIY preamp thread works just fine for many use cases like this, FWIW. There's a new higher headroom version coming soon too, as nearly all my new pedal designs will be be running on +/-15V internally. The ZIO would certainly be a great option for a store bought solution by all accounts though.
