Brewed a strong and hoppy American barley wine yesterday with an OG of 1.11. I'm going to use 2 packs of US-05 as my yeast. Added 1 pack yesterday and will add a 2nd pack in a week or two to avoid any potential explosions or loss of beer.

My RIS has been in secondary for about a week.

Bottled my wee heavy. It "only" attenuated to 9% ABV. LOL, was hoping that one might be a 10%er.

Kegged the possibly contaminated dark saison. It's force carbonating at the moment. I might check on it in a week or two.

Put a honey Kolsh in secondary yesterday. Figure 2-3 weeks and I'll keg it.
