The Great Summer 07 TB Barbeque thread

I know my profile says I am in wisconsin but i was born and raised in Louisiana. I am pretty decent at cajun food and BBQ. I'll admit I don't know "jack" about other cuisines (italian, german, chinese....etc)....but I have gumbo, sauce piquant, et toufee down to a science.

Does anybody else par boil their ribs before grilling? Some folks might say this is blasphemy, but i've found it works better and speeds things up if you're hungry and don't want to let them go all day at low heat.

My grill has a water trough that makes a good amount of steam. Ribs and chicken cook very slowly and stay very moist. Try putting a metal container full of water next to the coals or burner if you have room, it really works great.
