I've seen that before, and it seems to me that he is a bit angry and defensive about all of this. But, personality aside, I'd sure like to see a video of him testing this theory (@40:22):

If I go out and buy a Chinese Strat for $50, and I do a really good set-up, but I put some name-brand tuners on it, and I put a bridge on it that everybody can tell is a Floyd Rose, and it says "Floyd Rose" on it, or something like that, and I give it to somebody that's a professional musician, they won't be able to tell the difference between that and a $6,000 - $7,000 guitar... even if it's made out of plywood.

He also has another video where he discusses this same subject on some kind of pod-cast thingy, where he says originally he was a staunch believer in tonewood, and he did do such an experiment in order to prove the doubters wrong, and he ended up convinced that tonewoods are not a real thing.
I do agree, this particular video is kinda long winded and boring, but he does make some valid points.
