DS9 is the most robust of the series. It had the most character development and the deepest and most layered stories. Now I hear they're bringing Sisko back, which I'm sure will be just wonderful.

I agree. As much as I like Star Trek’s Utopian optimism, I really enjoyed seeing the Federation have to navigate a slightly darker and grittier universe. So last night, we watched the series finale of Deep Space Nine. […] I have to say, this is now my favorite spin-off. Great series.
Really wish Denise Crosby would have stayed on
She did well enough with what they gave her in the first season. It didn't make sense though. What was Worf's job? He stood near her unless he was at one of the stations by the view screen with the ridiculous recliner chairs. It's like they knew the tough guy warrior should be head of security but the little blonde lady was instead so let's just keep him over there? She was miscast. As much as I respect Gene Roddenberry for his progressive vision, he was still a product of his time and saw female cast members as little more than eye candy.
Lt Yar was horrible as a security officer. Literally any other possible position on the ship would have been more believable.
Which is really too bad because I believe Denise Crosby had a lot of potential. I thought she did a great job when she came back as a Romulan and also as Yar in the alternate universe episode.

And both series only have one episode I really don't like watching--the other series have more...
I'd describe Voyager as the most uneven of all series; some real stinkers, but then occasionally a real good one.Yup, agreed. We are currently watching Voyager and we're in the second season. It's not half as good. There's been several horrible episodes already (going warp 10 and turning into newts, having kids, then magically turning back into humans comes to mind).
I like The Orville better than some of the official ST shows.Yup, agreed. We are currently watching Voyager and we're in the second season. It's not half as good. They copied several original episodes in the first season. And it feels like it was written by 14 year old boys. But it's mildly entertaining, despite that.

Feels more Star Trek--and deliberately so.
The last season of Orville steered away from the juvenile humor (not completely) and was a very decent science fiction show. A little preachy in places, but YMMV....I'm told that the first season was not that good, and after seeing it up to episode 11 (I think), I have to agree. There was one or two shows that I'd consider good, a bunch that were just OK, and a few that were really bad. But overall, we keep watching, so I guess as a whole, I'm going to say I like it. I like that there's no transporter and they have to use the shuttles to get off the ship. Not a big fan of that robot guy. And I'm not a big fan of the juvenile theme that seems to run through every show. But like I said, overall, it's mildly entertaining.
