I've owned both and expect you can't go wrong with either. I will say that GK was more reliable IME, and also a little quieter, but I know that varies amp to amp. To me it depends on your needs. I prefer the Eden at home, but the GK kills it live. I still use GK today. Eden? ...it's been a while, but it's still a great sound.

Used WT-300 or GK 700RB-II

Go with the 700rb ii. You will have plenty of headroom, most honest power ratings in the biz as well. The build quality is second to none and as stated, a true workhorse. It won't have the warmth of the Eden, but it's pretty easy to warm up the 700rb ii IMO. The response and heft of the GK are what make it so beautiful, so punchy.
I will say, the Eden is a nice amp. If you do go that route, find the most efficient cab you can. Some of the older Eden cabs are hyper sensative (103 to 105 db @ 1w/1m) the T, XLT and XST models come to mind.
