What an awesome fish I made last night!

Titus, Catfish is an industry in the American South. Catfish farms...on the menu at very good restaraunts.....not just backwater "greasyspoon" eateries, etc. A smaller cousin of the catfish from the northern US where I grew up we called a "bullhead". Don't know what a proper, biological term for them might be, but they're very much like catfish, but small enough you can clean them and fry them whole instead of having to fillet them, etc. They do go a little soft in the summer when the water temps. get too warm...delicious the rest of the year.

I believe the Bullhead is a catfish, just a panfish sized catfish. We used to throw lines out overnight when we'd go camping when I was a kid. We'd usually have a few in the morning.

Now I'm Jonesing for bullhead fried in a cast iron skillet over open fire!

They're tasty, but if you get poked by the spines on one, it hurts like the dickens!
 
Wow... I haven't eaten bullhead since i was a young lad fishing in the Kinderhook Creek. As I recall the meat on the bullheads is slightly pink. And never a finer tasting fish was there except possibly for the occassional brook trout..... ah the days of my youth...
