I started a similar "fantasy covers" thread a while back, based a conversation with my friends about how awesome it would've been if Rush had covered a Black Sabbath tune, especially back in the day when Geddy could still scream.

That thread also brought up the idea of Judas Priest doing a cover of Deep Purple's Child in Time.

I always hoped that Van Halen would do a cover of Detroit Rock City. Van Halen was one of the best cover bands back when they used to play rock and roll (You Really Got Me; Dancing in the Streets; Where Have All the Good Times Gone; Pretty Woman; etc.).
