What color pickguard would work best for my Pbass?

The problem with tort is that there is a lot of ugly tort out there. Finding some that isn't super fake looking or blurry can be difficult, unless you want to spend $$$ on Spitfire or similar.

Anodized looks better with maple rather than rosewood.

Being a Tokai Hard Puncher, I would be tempted to lean into the fact that while it may look and sound like a Fender, it has a decidedly non-Fender provenance. I'd consider something that was never offered on a Fender, like certain colors or patterns (deep red or brown pearloid, flame patterns, etc).

I do not believe tort goes well with black. Black is a great color to bring in something either subtly dramatic, or eye-popping dramatic. Here are quite a number of great options:
