Spalted Walnut.... the spalt is a fungal infection in the wood that causes discoloration. Its pretty looks cool. Boutique builders seek out this diseased wood because it makes for a unique looking instrument.

Hard to tell what it is by picture, looks dark like walnut, could also be dark maple.
