That's an open crown flat brimmed fur felt hat. That is the way they come before the brim and crown are formed into folds. All that's been done to the one in the OP photo is that it's had a decorative hat band added to it. Put some steam to it and you can shape it into just about any popular shape...or vice versa.
Just looking at them, I'd say these are wool hats, which do not take or hold shape well. I may be wrong, but the texture really says "wool."
Depends on the material. If they're felt, then they can be blocked or shaped pretty much as you wish. Felt is a much better material.
One thing you can always do is search Ebay for a Stetson Open Road, which is a good quality hat that can be shaped just about any way you wish.
Here's a 7 1/4 which needs blocked, but the price isn't nuts. It still may be more than you want to spend...these hats have gone up a lot in the last couple of years.
