What to pair with 2x12 cabinet?

Maybe not, but I'd hope that, if I asked, "What differences would I notice going with one crossover or the other?" that they'd be able to give me a decent answer. I guess the answer would depend on which of the three available woofers you chose, too.

Some players like the highish crossover better versus the lowish design and vis a versa.
That's what they will tell you if you ask them a question such as "what is the better option" to fit personal sound goals.
If you are looking for an scientific answer why its not a good idea to match an existing cab with another "matching" cab although it does not match due to different crossover design, uhm, lets think about it.....

Oh, I get why you'd want two cabs to have the same crossover. I meant, as far as picking one in the fist place, Will the mid get stressed with the lower crossover? Will I have a spike/hole in the mids with one or the other with X driver? Stuff like that.

No spike nor hole in response with either of them but, if cab A) HT device covers too much of woofer response of cab B) while cab B) woofer response covers too much of HT device of cab A) THEN the total sound might be "problematic" and the total sound (likely) can hardly be fixed with the EQ.

There is a TB thread which is called "I'm a skinny stack believer" where I tried to explain this issue. Actually a member really sucked on total sound performance with his so called "matching" skinny stacked Avatar cabs

Well, so far so good. I've been playing around with different combinations, Ampeg 410 w/Avatar 210, 410 w/212, 210 w/212. Started out using the MB500 head for reference, and then plugged them into the SVT 3-PRO. Thought I had a winner with the SVT 3PRO paired up with the two Avatar cabs. Then today I turned around and saw my old Hartke Model 3500 (circa 1996-97) and she was looking at me with puppy dog eyes, like, "dude let me have a shot". It's been a couple of years since I had really played it, and never in anything other than a Hartke cab or the Ampeg 410. I had also considered selling it on more than one occasion, but the senitimental attachment to it has always kept me from pulling that trigger. Surprisingly, the Hartke blew me away. Paired up with the B210 and B212, the old amp has never sounded better. Only got the master a tick past 3 before I started getting concerned about pictures rattling off of the walls. Sh!+ after playing a while and standing in front of the cabs, I was getting so much vibe in my soul I could've sworn I had a brief case of vertigo.

Needless to say, before packing up the gear for this weekend, I will be swapping out the SVT 3-PRO in the rack for ol' reliable, and will drag along the GK for a backup (it is a 20+ year old amp...)
