Anybody changed the tailpiece on their EUB from a metal one to a wooden one? Both solid and hollow EUB. If so did you notice any difference in tone/harmonics/sustain?

Double Bass Wooden Tailpiece For EUB

If there is a difference (personally I only have solid body EUBs without a moving tailpiece), the reason for the difference might be more die to the weight and less due to the material. Also length (and string underlength) might have a major influence as well as the tailpiece wire or type of connection to the main body.
Just mentioning that because material alone might mislead you.
On my solid body instruments I use a piece of foam or rubber foam in the underlength to get rid of ringing I the underlengths. This damping is also an effect of a moving tailpiece.
